You haven’t tried Alton’s wings, then. Steam them for about 10 min to drain excess fat, put them in the fridge for a while to crisp up the skin, then cook them in the oven for a total of 40 minutes. a TON of fat drips away. So much so that there was enough to not burn those little tiny wings with 40 minutes of cooking. With either a buffalo sauce or (my favorite) an orange glaze, they are the BOMB. *respect*
